I was inspired by my friend Alicia Silverstone’s amazing recipe for quinoa, basil, and pine nuts which appears in her FABULOUS book, the Kind Diet (www.thekindlife.com) and this is my tweaked version of that meal, born out of a need to use the beets I had sitting in the fridge.
I’m not good with measurements, so use what seems right to you.
hot red quinoa, fresh torn basil, chilled roasted beets, olive oil, salt, sesame seeds. Enjoy!
