Did you ever think you’d see Jello shots on the blog? These are so fun! I’m a sucker for Jello inside a citrus rind! This recipe is inspired by the classic mojito cocktail.
I made these mojito Jello shots for a little get-together at my house last weekend and they went over really well. They are everything you love about a refreshing mojito—in the form of Jello shots!
These Jello shots are made with fresh mint and lime rinds. They are very fun, refreshing, and great for a BBQ or picnic.

Add rum if you want, or leave it out and just enjoy your cute Jello creations. Either way, these are worth the effort it takes to make a batch. Here’s what you do:
This mojito Jello shots recipe will make around 32 if using lime rinds. Recipe adapted from Food & Wine.
In a pot, combine the water and sugar over medium heat and stir until the sugar dissolves. Remove from heat and stir in the gelatin.
Add the lime juice and 2 mint stems (with leaves). Allow that to steep for 12-15 minutes. Remove the mint stems and stir in the rum if using.
In the meantime, hollow out your lime shells. This is probably the hardest part of making these. I used a small sharp knife to carve around the inside of the limes and then a melon baller to scoop out the centers.
If the insides don’t look perfect don’t worry! Mine looked far from perfect. Be sure to leave the limes cut in halves until after the Jello has set, then you can slice them into wedges.
Fill each lime shell with the Jello mixture and sprinkle in some chopped fresh mint (from the remaining leaves on that 3rd stem). Place in the refrigerator and allow to set for at least 3 hours.
These are a fun little party trick! I think I’m going to make these ahead of time for the next camping trip I go on. I’m going to be that girl who pulls out a tupperware of Jello shots. Ha!

How much gelatin in an envelope?
0.25 oz per envelope, it’s about 7 grams. I use the Knox unflavored gelatin brand most often.
There is no way you will make 32 servings with amount of ingredients in this recipe.
Six limes cut into six piece each (each half makes three wedges) would come out to 36 individual jello shots. 🙂
Turning the lime halves inside out , then just peel contents out! comes out perfect every time!
How far in advance can I make these
A few days, same as jello. But they need to stay cold (refrigerated). I packed them in a cooler once and after 4-5 hours they got soft and slimey as they just didn’t stay cold enough.
I just wanted to comment a tip for getting out the inside of the lime:
I used a lime juicer to get the juice out first. My juicer pushes the lime inside out so I left the half lime inside out, with a sharp knife I cut off the inside pieces by slicing down. To stabilize the lime while cutting I left it on my juicer to hold the shape. Then pushed the limes to be right side out. Worked so well and was so much easier this way! Just make sure the knife is sharp.
This recipe is amazing! We’ve been taking these to parties and they are a huge hit. We make the simple syrup hot enough to melt the gelatin, and we use regular plastic cups for the “shots”, but they’re delicious and relatively easy to make. We also stopped using mint pieces as they become dark and hard which makes them less appetizing, but they were cute at first. Thanks for sharing this!
I can’t seem to get the gelatin to dissolve – any tips?
I’ve been making the simple syrup basically boil and using a whisk! The hotter the mixture is, the easier it dissolves.
I love this recipe, I have made it a couple of times and it’s always been a hit at parties 🙂 Do you know how much agar agar I would need in order to replace the gelatine?

I tried these with friends on the weekend. Delish! I recomend doing the carving first. It is the toughest part and you can use the lime juice in the recipe. It is a lot of work but they are delicious and very impressive to your friends!
