If you’ve never had baked oatmeal before, you are in for a treat with this overnight baked apple oatmeal. It’s seasonal, but could be enjoyed anytime.
It’s super easy to make, and you can even throw it together the night before and just groggily pop it in the oven while making coffee the next morning.

And it’s pretty healthy—maybe not “perfectly” healthy, but I’m sort of convinced that’s not really a thing anyway. I’ll go for something pretty healthy any day. 🙂

I also love that you can easily divide this up into individual baking dishes for personal meal prep (see recipe notes). Or bake the recipe below in a pie pan for 4-6 people, depending if you serve cheesy scrambled eggs alongside this (and you should).
You could very easily double or triple this recipe and bake in a large rectangle dish for a large crowd. So if your house is going to look like the opening scenes from Home Alone this year, then you may be in need of that size baked oatmeal.
Now I really want to go watch Home Alone. Do I have to wait until after Thanksgiving? Is it sacrilege if I watch it, like, this weekend instead?
My favorite part of this overnight baked apple oatmeal is the apple slices on the bottom. They get all soft and delicious during baking and it’s almost like a super thin slice of apple pie in your breakfast. Yum!
If you have leftovers, just save them covered in the refrigerator and warm them up the next day (or even a few days later is OK). If they get a little dry, just drizzle some milk, cream, or maple syrup over them and you’re in business again. Enjoy! xo. Emma

Ingredients
- 1 ¾ oats
- ⅓ cup brown sugar
- ½ cup chopped nuts (pecans, walnuts, etc.)
- 1 teaspoon baking powder
- ⅛ teaspoon salt
- 1 teaspoon cinnamon
- 1½ cups milk
- 1 egg
- 1 teaspoon vanilla extract
- 2 tablespoons butter (melted)
- 2 apples
Instructions
- In a large mixing bowl, stir together the oats, sugar, nuts, baking powder, salt, and cinnamon. Finely slice or chop up the apples (removing the core, seeds, and stem) and set aside.
- In a small mixing bowl, whisk together the milk, egg, vanilla extract, and melted but slightly cooled butter. Pour this mixture into the larger mixing bowl and stir to combine. Then stir in half the apples.
- In a pie pan, or divided among four single serving baking dishes, add the remaining apple pieces on the bottom. Then pour the oat mixture over the top. You can bake immediately or cover and refrigerate overnight.
- Bake at 350°F for 30 minutes. Allow to slightly cool before eating. Top with cream, milk, maple syrup or nothing at all.
