Egg White Bites Ingredients:
- Egg Whites – or you can use the whole egg (see recipe notes)
- Cottage Cheese – adds creaminess plus more protein
- Salt and Pepper
- Add-ons: bacon bits, green onion, or chopped red pepper
How to make egg white bites:
Simply stir together all the ingredients. Pour into a greased muffin pan and bake at 350°F for 25-28 minutes.
You can keep these baked egg white bites plain or add on any mix in ingredients you want. I typically add bacon bits or crumbled veggie sausage, chopped green onion, and a little cheddar cheese sprinkled on top before baking.
How long do egg white bites stay good for?
After baking, you can store these in an airtight container in the refrigerator for at least three days (and probably longer).

- ⅓ cup cottage cheese
- ¼ cup bacon bits
- 2 tablespoons green onion (chopped)

- In a well greased muffin pan, spoon in the batter.
- Sprinkle salt and pepper over the top along with the cheddar cheese, if using.
- Bake at 350°F for 25 minutes or until the eggs look set.
- The bites will puff at the end of the baking time but will deflate some as they cool. Allow them to cool before removing from the pan.

Best, and easiest weekday breakfast grab and go!
Hi! Love this but they stuck soooo bad to my muffin tin, how do you grease your tins?
I just bought a silicone one someone recommended because I was having a similar issue . It works perfectly
Made these yesterday for the week and they’re DELICIOUS!! 😋 I did adjust some things with what I had on hand. For instance, I used egg whites from a cartoon and sub the cheddar cheese for mozzarella. They turned out great! Will definitely keep in my rotation.
I made them today. Very yummy. I made several different ones, using a variety of cheeses, meats and vegetables. I can’t wait for my husband to try them.
I made a similar recipe, egg whites, cottage cheese, mozzarella, spinach & green onion. They tasted great out of the oven, but they did not freeze good at all. Very grainy. What did I do wrong? I look forward to trying this recipe.
I really love the egg white bites at Starbucks but can’t seem to get mine at home to taste like theirs. I made this but they’re watery…like super moist. Maybe too much cottage cheese?
I love them from Starbucks too. Interesting yours turned out on the too moist side, I tend to have the opposite problem. I like them to be almost plump, as that feels more like the Starbucks version to me. The very best way to achieve this is probably to use a sous vide to cook them in (it’s like cooking in a temperature controlled water bath) but we don’t currently have any sous vide recipes on our blog as it’s not a kitchen item I currently own, and I’m unsure if it’s very common for most people?
Did you use spinach? That will make them watery.
Was looking for easy breakfast on the go and these fit the bill. Easy and delicious. Thanks, Emma!
Looks good, easy to make, tastes good, used turkey bacon, but…it doesn’t say how many it should make and the nutritional info doesn’t say how much is one serving.
At the top of the recipe it says 6 bites.
Great way for fitness focused folks (f3 ?) to meal prep so they can ensure getting enough protein in their day. Thanks for the recipe
Had egg bites (from Costco) at a friends house months ago. On a whim tried the Trader Joe’s version this week. And now I’m hooked! I will be trying this recipe soon! (But using whole eggs because I don’t have a particular use for the yolks at the moment-no fancy baking/cooking plans.)
This recipe was so easy and so delish! I didn’t have scallions so used dried chives. I think scallions would be better… one question- my mixture wasn’t quite a batter and I wonder if I should have mixed the cottage cheese differently. I had to redistribute the cottage cheese and cheddar into the tins with the liquid egg whites so everything was even. These were delicious nonetheless!
I pour the egg whites in my muffin pan and add the additional ingredients to each one. Mostly because I hate doing dishes lol
I have put the egg whites and cottage cheese in my bender then added the other ingredients to the mix and poured into muffin tins. Give a more smooth mixture and resembles Starbucks egg bites more.
I used paper muffin liners. No sticking
I have to make these (jeremy buys them ALL the time). Thanks for the recipe.
Such an easy and delicious breakfast!
